3 Cheese & Zucchini Grilled Cheese Sandwich

I am a big lover of grilled cheese sandwiches! So when I saw this contest to enter your own creation through a cheese company I follow on Pinterest (Rumiano Cheese), I decided I wanted to enter and do something creative. I have had a board on my Pinterest page dedicated to grilled cheese already, but I thought it would be fun to create a sandwich of my own. The contest is basically to create a unique take on a grilled cheese and then pin it to their grilled cheese sandwich board and tag it. So here is my go at creating a delicious grilled cheese sandwich! I did include photos of how I cooked it with a little bit of information on what I did, etc.. and the recipe will follow.

3 Cheese & Zucchini Grilled Cheese Sandwich
 First I wanted thinly sliced zucchini, so I used a cheese slicer to get really thin slices, and then I cut them in half to fit on the french bread I was using.

 I quickly seared the zucchini in a small pat of butter to cook it all the way through. I salted and peppered it to give it a little more flavor.
I used French bread, parmigiano reggiano & mozzarella & Alfredo sauce.
Jarred Alfredo sauce can be used, I opted to make mine.
Bread buttered side down, I added the Alfredo sauce.
Then I added two slices of parmigiano reggiano cheese & then the cooked zucchini.
Next I added grated mozzarella & another 2 slices of parmigiano.
Lastly I added more Alfredo sauce.
Grill it! :)
Cut, eat, & enjoy!
Recipe:
3 Cheese Zucchini Grilled Cheese Sandwich

Ingredients:
2 slices of your favorite type of bread (I used French bread)
Butter (to spread generously on each slice of bread & a small pat for searing the zucchini)
4 strips of thinly sliced zucchini (I used a cheese slicer)
4 thin slices of Parmigiano reggiano cheese
small handful of shredded or sliced mozzarella cheese
Your favorite jarred Alfredo sauce (I made my own sauce)
Salt & pepper

First slice zucchini and lightly sear it in a hot skillet with a small pat of butter and salt and pepper to taste. (I didn't add a lot of salt as the Alfredo sauce is slightly salty and the parmigiano cheese is also salty). Once the zucchini is cooked, set aside, don't worry about it getting cold, as it will heat  up nicely in the sandwich once you grill it. Butter your bread generously and place one slice buttered side down: add a small amount of Alfredo sauce, 2 slices of parmigiano cheese, cooked zucchini slices, small handful of mozzarella, the last 2 slices of parmigiano cheese then another small amount of Alfredo sauce, top with other buttered slice of bread and grill! Eat & enjoy!
